Eggless Red Velvet Cake

I tried baking red velvet cupcakes using my vanilla cupcake recipe, by doing some adjustments here and there and it was the success! Here is the recipe:


Ingredients

All purpose flour 1 cup

Sugar ½ cup
Cocoa powder 2 tbsp
Baking powder 1 tsp
Baking soda ¼ tsp
Yogurt ½ cup
Vegetable oil ½ cup
Vanilla extract around ½ tsp
Red food color around ¼ tsp (I added little less so did not get the desired color)
Milk 3-4 tbsp as needed


 Recipe

1. Preheat the oven at 350 degree Fahrenheit (180 Degree Celsius).

2. Take all purpose flour, baking powder, baking soda and cocoa in a bowl. Mix well. (I read on different blogs, to get good results sieve the dry ingredients 1-2 times. But I am bit lazy in this case)
3. In another bowl take yogurt and sugar, whisk it with hand mixer until it becomes creamy. Add oil and vanilla extract to it and again whisk for a minute or two. Now add red food color to it and mix well.
4. Now slowly add dry ingredients to wet. Mix it well. Add milk if needed to get the nice consistency batter.
5. Fill the cupcake liner for about 3/4  and bake it in a preheated oven for about 15-18 minutes.
