Veggie Cheesy Toast

Very easy, simple and quick recipe. Even kids will love these toasts. You can eat them for breakfast or as snacks as well. One more thing, this time I tried my hands on food photography myself :)

Serves - 3


 
Ingredients
Brown bread slices 6 (you can use white as well)
Onions finely chopped 1 cup
Colored bell pepper finely chopped 1 cup (just green would be fine too)
Carrots finely chopped 1 cup
Sweet corn boiled 1 cup
Olives 1 cup
(Add your choice of veggies)
Cheese 1-2 cups
Butter to spread on bread slices
Italian seasoning
Chili flakes
Salt to taste (if needed)


 
Recipe

Preheat oven to 350 F and keep ready the baking tray.

Spread butter on each side of the bread. Arrange the slices on baking tray.
Spread veggies on the slices evenly, sprinkle lots of shredded cheese on the veggies. (I use cheddar cheese most of the times, but you can use any variety of your choice.)
Now sprinkle Italian seasoning and chili flakes on it. Sprinkle little salt to taste if you want. But cheese has some salt, so no need to sprinkle more salt.
Now toast them in a oven until cheese melts completely and starts to turn little brown, and here your veggie cheesy toasts are ready to eat. Serve hot with sauce or just as it is.

Tip



You can make them on gas as well. On tava toast them one by one.

Corn Chowder Soup

This is my modified recipe of the original corn chowder, not much change but at least some. My husband first introduced me to this soup, and since then I make this soup every now and then. Nice hot bowl of soup with croutons or just toasted bread would make your lunch or dinner, when you're at leisure.  

Serves 2 people

Ingredients

Red bell pepper 1-2 roughly chopped
Onion 1 medium sized, roughly chopped
Potato 1 roughly chopped
Sweet Corn 1-2 cups
Cream about ½ cup
Vegetable stalk (if you don’t have it, just use water)
Salt to taste
Black pepper to taste
Butter 1-2 tsp
Little olive oil



Recipe

1. In a pan add butter, let it melt. Then add olive oil, onion and saute for sometime to soften the onion. Then add bell pepper and potatoes and again saute for 1-2 minutes.
2. If you have boiled sweet corns then add them at the end of this step, and if not, then add at this stage and add water or vegetable stalk just to cover the vegetables. Simmer till the vegetables are cooked.
3. Once veggies are cooked, switch off the heat and let it cool for sometime. Then blend it in a blender. Do not blend it to smooth pure. You should get some chunks of veggies when eating.
4. Now add cream to this mixture and season it with salt and pepper and serve it hot with toasted bread.      

Tip

Red bell peppers are little sweeter than green ones. But if red bell peppers are not available then, you can use green bell peppers.

कणकेचे लाडू - Whole wheat flour Laddu



This one is my favorite ladoo recipe. These are healthy ladoo (पौष्टिक लाडू). My mother makes it so perfect. I am trying to make them just like her since last few years. So here is my mother’s recipe,

Ingredients

Ghee 1 cup
Whole wheat flour 2 cups
Edible gum 1-2 tbsp
Powdered Sugar 1 cup (add extra if required)

Recipe

1. Heat 2 tbsp of ghee in a pan. Add edible gum and fry till it puffs nicely. Take it out and let it cool. After gum cools down, crush it with hands coarsely.
2. Now in the same pan add remaining ghee and wheat flour. If needed add extra ghee and roast wheat flour stirring continuously till it changes color. Keep eye on it while roasting, do not burn it.
3. After roasting the flour nicely, let it cool for some time. Cool it until you can handle it with bare hands.
4. Add edible fried gum and powdered sugar and mix it nicely. Now make medium sized laddus and store them in a airtight jar. It can be stored up to a week or two on shelf.
